I have to be honest with you – I am a total sucker for flavoured coffees and lattes. In fact, my husband and I used to have this habit of stopping for delicious beverages (and snacks of course) on busy weekends. It was our way of taking half an hour together and just hanging out, enjoying a delicious pick-me-up.

The problem was, I was doing this often enough that I came to rely on it. And when I started putting on weight, this was an area where I knew I had to make some changes. Did that mean give it up entirely? No. But find a solution that wasn’t calorie laden drinks filled with sugar and preservatives? Yes.

I switched to tea and opted for healthier snack options which still gave me the same satisfaction … but I loved pumpkin spice season and I didn’t want to give it up entirely. So I found a number of recipes and just started experimenting. Using real pumpkin was a game changer and opting for a nut milk vs heavy cream kept the creaminess without all the calories. Better still, I think my version is better than the ones you get at coffeehouses but I am biased – so you tell me what you think!

Skinny Pumpkin Spice Latte

Love pumpkin spice lattes? Get this healthier version that you can enjoy without guilt!

  • 1 1/2 cups unsweetened vanilla almond milk (Or non-dairy milk of your choice. )
  • 1 tbsp pure maple syrup
  • 2 tbsp pure vanilla extract
  • 1/4 tsp pumpkin pie spice
  • 3 tbsp pure pumpkin
  • 1 pkg Instant coffee (I prefer Starbucks VIA but I have tried this with other instant coffees and they turned out great. My back up is Folgers classic roast coffee.)
  1. Place the milk, maple syrup, pumpkin pie spice, pumpkin puree in a small saucepan and bring to a simmer. Add the instant coffee, stir well until coffee is dissolved and the mixture is smooth and creamy. Pour into a mug and top with a little cinnamon or, if you want to indulge a little, add real whipped cream. Enjoy!
